Blogger & The Geek has bought me many opportunities. One of my favourite experiences has been working with the Gin Festival and when this little beauty arrived on my doorstep, I was in a little gin induced heaven.
As well as hosting fabulous gin festivals across the UK, the Gin Festival have created the Gin Explorer. My favourite was the Corker’s gin, which surprisingly, I enjoyed straight over ice. As the gins are all craft gins, and are not your standard behind the bar drinks, it’s such a special something to receive and is ideal for any gin lover. The Gin Explorer asked me to come up with a summer dish to accompany the gins. I’ve always said that Gin is one of my favourite drinks so naturally it needs to be accompanied with one of my favourite foods; bread. I decided to whip up a tomato and olive loaf to nibble on whilst drinking my gin. It was the perfect snack to and I could just imagine sitting round with the girls sipping on our favourite drink and eating bread and hummus.
Sundried Tomato & Black Olive Loaf recipe:
500g of bread flour
12g of yeast
1 tsp of salt
40g of butter
300 ml of tepid water
- Add the bread flour, butter and salt into the mixing bowl.
- Add the yeast into the bowl but make sure it does not mix with the salt as this will kill the yeast and will not rise.
- Add small amount of the tepid water and use your dough hook to mix the mixture together. If the mixture looks dry; keep adding small amounts of water. You do not need to use all the water
- Leave it mixing for a good 5-10 minutes on a medium setting on your mixed. Once done, either add a damp tea towel or an oiled piece of cling film over the bowl and leave to prove. Leave it until the dough has double in size or for an hour.
- Chop your olives and sundried tomatoes into small chunks and pre-heat your oven on gas mark 2
- Once the dough has double, kneed it for a few minutes. Lay the dough out and start adding in the olives and tomatoes. Kneed it to mix it in and distribute them across the dough.
- Get your bread loaf/tin and grease it with either oil or butter. Add the dough and leave it to cook for one hour.
- Grab your favourite gin and serve whilst still warm – perfect!
